Quick Egg Breakfast Ideas
Eggs are a delicious part of breakfast and these quick and easy egg recipes and ideas will have you in and out of the kitchen in no time. Some can even be made the night before so you can just grab and go in the morning on those days when time is short. Enjoy!
Hard Boiled Eggs
Hard boil a few eggs at a time and chill in the refrigerator. These are great to have all prepared for mornings when you are in a real hurry.
** Pair them up with a warm bagel, toasted whole-grain bread or a muffin.
** To add a little something extra, you could also pack up a small container of honey mustard, salsa or some low-fat sour cream mixed with herbs of your own choosing and dip the hard boiled egg in it. Add some whole-grain crackers and a piece of fruit for a simple and quick meal.
Scrambled Eggs In A Pocket
Scrambled eggs don’t take very much time. Add your favorite seasonings and herbs while you are cooking them.
** For a quick and easy breakfast simply stuff the warm eggs into a pita pocket and top with some chopped mushrooms and a little salsa or some shredded cheese, pitted and chopped olives and sprouts or just about anything you prefer.
** You could also place the scrambled eggs on top of a piece of plain or cinnamon raisin toast or even a warm toasted waffle.
Pesto Egg Sandwich
** Take a hard boiled egg and slice it into a few lengthwise slices. Toast two slices of whole grain bread. Take one slice of toast and spread with some spicy mustard and place the egg slices on top. Add a slice of low-fat cheese of choice and some sprouts. Spread a thin layer of prepared basil pesto (and, if desired some fresh basil leaves for added basil flavor) on the other piece of toast and place on top of the sandwich.
Quick Egg Salad
** Just combine chopped hard boiled eggs with either a low-fat mayonnaise or plain low-fat yogurt, a sprinkle of dried chives or fresh chives, a dash of paprika, and some chopped vegetables and extras of your own choosing, such as (celery, green bell pepper, roasted red pepper, jicama, pitted olives (black or pimiento stuffed), capers, scallions or sun-dried tomatoes). You could also mix the salad with a little mustard, pesto or a flavored hummus instead of the mayonnaise. This is a great quick breakfast to take to work along with some whole grain rolls or muffins and a piece of fruit.
Omelet Egg Wrap
** Omelets make a quick egg breakfast and are an easy take along meal too. Just place a cooked omelet, sliced into strips, on top of a soft tortilla shell (choose one of the flavored varieties) and place some thin slices of avocado on top of the omelet along with some grated cheese of choice and a couple of tomato slices. Roll up the wrap and secure in a paper towel or place in a plastic container if you need to carry it off to work.
Eggs and Waffles
** A very easy idea is to take a fried egg and place it over the top of a plain toasted waffle and top with a little shredded cheese, salsa and a dollop of sour cream.
** For a sweeter egg idea, try using a cinnamon waffle and top with the fried egg then drizzle on a little honey or maple syrup and some chopped walnuts or pecans.
These simple and quick egg recipes are great for breakfast, a quick mini-meal, snack or even a light dinner.
