Sun-dried tomatoes, olives and fresh parmesan cheese give this quick pasta dish its great rich flavor with surprising ease.

7 Ingredients Needed:

pasta - 3 cups cooked
(choose a chunky style pasta like spirals or small shells)

broccoli - 1 cup frozen pieces
(thawed,drained and cut into medium chunks)

olives (black or green) - 1/2 cup
(chopped into medium pieces)

bottled sun dried tomatoes in oil - 1/2 cup chopped

**olive oil - to desired moistness

**lemon juice - to taste

parmesan cheese - 1/2 cup freshly grated


**Instead of olive oil and lemon juice to dress this easy pasta salad recipe, try one or both of these delicious ideas, our mustard caper dressing or lemony zing salsa.


Make Ahead:
- Prepare pasta according to package directions
- Thaw, drain and cut up frozen broccoli

You can make the pasta ahead of time or prepare it as you prepare the rest of the salad.

1. Heat the pasta water and bring to boil, cooking pasta according to package directions.

2. Prepare the broccoli, olives and tomatoes while the pasta is cooking, putting all the ingredients into a large mixing bowl as they are ready.

3. When the pasta is finished cooking, drain well and add to the bowl of salad ingredients.

4. Drizzle the olive oil over the salad and squeeze lemon juice over all. Toss well to coat, adjusting the oil and lemon juice as needed.

5. Plate each salad and grate the parmesan cheese over each.

This salad may also be refrigerated to chill before serving. Grate the cheese on each pasta salad just before serving.
