Cucumber Salad Recipe

This quick cucumber salad recipe combines crisp cucumbers, creamy yogurt and spicy scallions. Seedless cucumbers make it easier by eliminating the need to remove the seeds, which can be bitter.

2-3 servings

5 Ingredients Needed:

1 large seedless cucumber – cut thinly into half-moons
(use entire cucumber if unwaxed, remove skin if waxed)

2 scallions – thinly sliced

fresh mint – 1/4 cup (or to taste) chopped finely

lemon zest – 1/4 tsp

Greek-style yogurt – 1/2 cup

1. In a mixing bowl, add the cucumber, scallions, mint and lemon zest. Toss to combine.

2. Add the yogurt and toss the salad well, making sure that everything is well coated.
