Made with five ingredients, this cucumber and onion salad is fresh and light and so easy you can make it any time.

Using this cucumber salad, try the flavorful salmon cucumber rolls below for a quick and easy meal idea.

5 Ingredients Needed:

cucumbers – 2 medium cucumbers
sliced thinly in half-moons
(if cucumber skin is waxed – peel before slicing)

red onion – 1/2 medium onion
sliced thinly in half-moons

capers – 1/4 cup

seasoned rice vinegar – 1/4 to 1/2 cup

dried dill – 1/4 tsp or to taste

1. Combine all the salad ingredients in a mixing bowl. Toss salad to combine well and adjust vinegar and dill to taste.

2. Allow cucumber salad to marinate for an hour or so before serving.

** Serve cucumber salad over baked fish with steamed rice on the side.

** Serve this quick salad along with scrambled eggs with shredded cheese over top and whole grain toast.

Smoked Salmon Cucumber Rolls



Steamed and Cooled           Steam the cabbage leaves until
 Cabbage Leaves - (2)        tender and allow to cool enough
 large leaves                to handle.

Cucumber and Onion           Lay the cabbage leaves flat on a
 Salad                       serving plate. Place about a cup
                             of the cucumber and onion salad
                             on each cabbage leaf in a line
4oz Smoked Salmon            along one edge of each cabbage
                             leaf.
Chow Mein Noodles   
                             Layer the smoked salmon on top of
                             the salad and roll up each cabbage
                             leaf.

                             Serve each cabbage roll on top of 
                             a bed of chow mein noodles.

Easy Ingredient Exchanges:

* Instead of Red Onions: try Scallions (4-5) sliced or Shallots (2-3) thinly sliced

* Instead of Rice Vinegar: try Apple Cider Vinegar or Red Wine Vinegar

* Instead of Capers: try Oil-Cured Olives or Anchovies (2-3 fillets)
