Our creamy potato cucumber salad recipe is filled with great taste and texture. With sour cream, potatoes and crunchy cucumbers this creamy potato salad is a real crowd pleaser. Easy to prepare and full of flavor.

5 Ingredients Needed:

red potatoes – 4 medium potatoes
(wash, boil until tender, cool and cut into 1/2” cubes)

cucumber – 1 medium
(washed and cut into medium dice)

red onion – 1/2 cup diced

sour cream – 1/2 to 3/4 cup

chives – fresh (1 tbsp – finely chopped or 1/4 tsp dried)


Make Ahead:
- Boil 4 medium red potatoes until tender, drain, cool and cut into 1/2” cubes

1. Prepare potatoes ahead of time or as you make the salad.

2. In a mixing bowl, combine the cucumber, onion, chives and cooked, cooled and cut up potatoes.

3. Add the sour cream, starting with a half cup and mix well. Add more sour cream to potato salad as desired.

4. Allow potato salad to marinate so that all the flavors can meld together.
