Crab Salad Recipe with Carrot Citrus Salsa:


A quick and delicious seafood salad with sweet crabmeat and crunchy cucumbers dressed in a simple carrot citrus salsa made with carrots, lemon, celery and onions.

You will need 6 ingredients:

- Fresh or Imitation Crabmeat
- Seedless Cucumber
- Packaged Shredded Carrots
- Celery
- Onions
- Lemon (Juice and Zest)

- You can prepare the salsa a few hours
ahead of time or the day before and allow to marinate.

Ingredients:

Salsa Ingredients

packaged shredded carrots – 1 cup

celery – 1/4 cup diced

onion – 1/4 cup diced

lemon zest – 1/2 tsp

fresh squeezed lemon juice – 1 to 2 tbsp

Quick Tip: You can pulse the carrots, celery and onion in a food processor until you reach the consistency you desire and transfer to a mixing bowl.

Crab Salad Ingredients

crabmeat 2 cups cooked
(use packaged crabmeat and cook if needed or
use packaged imitation crabmeat and separate into pieces)

seedless cucumber – 1 cup cubed

1. Start by making the salsa. Prepare vegetables either by hand or in a food processor and place in a mixing bowl.

2. To the vegetables, add the lemon juice and zest. Toss well to combine. Taste and adjust lemon juice if needed.

3. Allow salsa to marinate in the refrigerator for at least three hours or overnight if possible.

4. In another bowl combine the crabmeat and the cucumbers.

5. To serve, either plate the crabmeat mixture on spinach leaves or salad greens and spoon the salsa over the top or mix the salsa into the crabmeat and serve on spinach leaves or salad greens.
