Cornbread Salad Recipe

Cornbread has such a wonderful flavor and this easy cornbread salad recipe builds on that flavor. Sweet green pepper, rich sun-dried tomatoes, spicy and crunchy red onion and smoky bacon accent and blend with the great taste and texture of cornbread to make a delicious salad.

This recipe can be adjusted for vegetarians by substituting a vegetarian style bacon and it still has a terrific result.

Use the easy menu planner for some terrific quick meal ideas.

4-6 Servings

6 Ingredients Needed:

cornbread mix – 1 recipe prepared according to
package directions and cooled
(this can be prepared the day before making salad)

green pepper – 1 cup medium dice

bottled sun-dried tomatoes in oil – 1/2 cup diced

red onion – 1/2 cup diced

bacon – 4-6 crispy cooked pieces (crumbled)

all natural store bought Italian style dressing

Make Ahead:
- 1 Recipe of Cornbread Mix

- 4-6 Slices of Crispy Cooked Bacon – crumbled
(for Vegetarian Bacon – cook according to package directions and dice into small pieces)

1. Prepare the cornbread according to package directions and allow to cool completely.

2. In a large bowl, crumble cornbread into bite size pieces. The amount of cornbread you use is up to you, add as much as you desire to make an ample salad.

3. Add the vegetables and the bacon.

4. Pour dressing over a little at a time, tossing after each addition, so as not to make the salad too wet or turn the cornbread into mush.

For a creamier salad try using a natural mayonnaise instead of the Italian dressing, or use a combination of both.

You may also want to heighten the flavor with any or all of these additions: adding a 1/2 cup of tomatoes or intensifying the corn flavor with a 1/2 cup of corn kernels or spicing it up with diced up jalapeno peppers to taste.
