Cold rice salad with cilantro, crunchy celery and pine nuts topped off with a seasoned vinegar. It’s fast and easy and a great quick meal.

5 Ingredients Needed:

basmati rice – 3 cups cooked and cooled

fresh cilantro – 1/4 cup finely chopped

celery – 1/2 cup diced

pine nuts – 1/4 to 1/2 cup

seasoned rice vinegar – 1 to 2 tbsp to taste

Make Ahead:
- Cook the rice, cool and measure out 3 cups

1. In a mixing bowl, combine the rice, cilantro, celery and pine nuts.

2. Add the seasoned vinegar a tablespoon at a time, tasting until desired flavor is achieved.
