Ingredients:

- 2 cups cooked shrimp (peeled, cut into pieces, chilled)
- 1 cup artichoke hearts (cut into bite-size pieces)
- 1/3 cup shredded coconut
- 2 tbsp fresh cilantro (roughly chopped)
- 1 tbsp olive oil
- 2 tbsp fresh lime juice
- 6 cups lettuce (torn into pieces)


2 to 3 servings

1. Place shrimp, artichoke hearts, coconut, cilantro, and lettuce in a bowl.

2. In a smaller bowl or jar with lid, combine the oil and lime juice with salt and pepper to taste. Combine well and add to the salad ingredients.

3. Toss salad well to combine and served chilled.

Serving Ideas:

** For a simple light meal, serve salad along with warm rolls.

** For a more substantial meal, allow salad to marinate in the refrigerator for a couple of hours and serve over cooked, warm or chilled, linguine noodles.

Ingredient Exchanges:

Artichoke Hearts: Use 1 cup diced sweet red peppers, 1/2 cup each diced carrots and seedless cucumbers or, 1 cup fresh or frozen (thawed and drained) peas.

Fresh Cilantro: Use fresh parsley or fresh dill.
