Easy Recipes for Chicken





Use these Chicken Salad Recipes for quick meals anytime. Try our Easy Cold Chicken Salad or our Chicken Salad with Ranch Dressing, a creamy and nutty salad, or our Chicken Portobello Salad with Portobello mushrooms and ginger.

Each recipes make 2 to 3 servings.

Easy Cold Chicken Salad


2 cups cubed cooked chicken
1/2 cup diced red bell pepper
1/2 cup diced yellow bell pepper
1/2 cup drained (reserve liquid) and roughly chopped marinated artichoke hearts
1/2 cup low-fat mayonnaise or low-fat plain Greek yogurt

- In a bowl, combine the chicken, peppers and artichoke hearts.

- In a small bowl, combine the mayonnaise or yogurt and 1 tbsp (or to taste) of the reserved liquid from the artichokes.

- Add dressing to the salad ingredients and toss well. Season with salt and pepper to taste.

Quick Meal Ideas:

Cold Chicken Salad with Pasta:

* Serve this simple salad scooped into bibb lettuce leaves along with a side dish of warm couscous drizzled with a little olive oil and a squeeze of lemon juice.

Chicken Salad Sandwich:

* Make a quick sandwich by serving this quick salad on dark rye bread along with a side of coleslaw.

Optional Additions:

* Add some dried or fresh rosemary or thyme.

* You could also add chopped walnuts or seasoned croutons.

Chicken Salad with Ranch Dressing


2 cups shredded, cooked chicken
1 cup thinly sliced celery
1/4 cup dried cranberries
2 tbsp walnut pieces
1/2 cup bottled low-fat ranch dressing
4 cups mixed salad greens

- In a bowl, combine the chicken, celery, cranberries and dressing.

- Serve salad over the greens and top each serving with some of the walnut pieces.

* Serve this easy salad with stir-fried broccoli and mushrooms.

Chicken with Pasta:

* Omit the greens and serve this flavorful chicken salad over a bed of cooked, whole grain fettuccini along with warm garlic bread.

Optional Additions:

* Add some cubes of smoked gouda or sharp cheddar cheese.








Warm Chicken Salad

4 oz of grilled chicken, thinly sliced
2 tbsp of basil oil – warmed over low heat in a saucepan
3 cups fresh baby spinach
1 medium diced apple
2 tbsp fresh squeezed lemon juice

- In a small saucepan under low heat, warm the basil oil slightly.

- In a bowl, combine the spinach, apples, lemon juice and half of the heated oil, tossing to combine well.

- Place the spinach mixture on serving plates and top with the grilled chicken.

- Drizzle the remaining oil over each salad serving.

Quick Salad Meal:

* Warm Chicken Salad and Lemon Pepper Rice Noodles: Serve salad with a side of warm rice noodles drizzled with a little olive oil and sprinkled with lemon pepper.

Salad and Cornbread:

* Serve this easy chicken salad with warm cornbread spread with butter or cream cheese.

Optional Additions:

* Add some pecan halves or pieces.



Chicken Portobello Salad

2 cups cubed, grilled chicken
1 cup cubed Portobello mushrooms
1/2 cup diced jicama
1/4 cup thinly sliced scallions
1 tsp minced ginger (fresh or bottled)
1 tbsp low sodium tamari soy sauce (or to taste)

In a bowl, combine all the salad ingredients and toss well. Adjust soy sauce if needed.
