Cheesy Chicken Salad
Layers of flavor from just a few ingredients create this rich tasting quick cheesy chicken salad in minutes.
This is a great salad to make when you are tired and hungry. It really is a quick and easy meal all by itself. Served on top of pasta or as a simple and delicious chicken salad sandwich, you can't go wrong with this easy salad recipe.

6 Ingredients Needed:
cooked chicken – 3 cups diced (store bought prepared chicken is the quickest and easiest)
chayote squash – 1 cup medium dice
sun-dried tomatoes in oil – 1/4 cup roughly chopped (use oil from tomatoes for the dressing – see instructions below)
capers – 2 tbsp
Swiss cheese – 1/2 cup cubed
fresh squeezed lemon juice – 1 to 2 tbsp or to taste
Make Ahead: - Store bought chicken may be used or if you prefer to cook your own, prepare as desired (bake, broil, fry) and dice 3 cups

1. In a mixing bowl, combine the chicken, squash, tomatoes, capers and Swiss cheese.
2. Drizzle oil from the tomatoes (about 1 tbsp) and the lemon juice over the salad ingredients and toss to combine well.
3. Adjust oil and lemon juice if needed.
