Chayote Rice Salad






Chayote rice salad is made with crunchy chayote, brown rice, creamy avocado, olive, and herbs to create a rich and flavorful salad. Ingredients:

- 2 cups cooked brown rice
- 1 cup chayote squash (medium dice)
- 1/2 cup avocado (cubed)
- 1/2 cup mango (cubed - frozen mango pieces can be used - thaw and drain prior to using)
- 1/4 cup pitted green olives (roughly chopped)
- 1 tsp dried oregano

2 to 3 servings

Place all ingredients in a bowl, salt and pepper to taste, and toss all ingredients to combine well.

Serving Idea:

** Scoop salad into large bibb lettuce leaves and serve along side a bowl of warm or cold tomato soup.
