YEAR ROUND VEGETABLE

Description:

Carrots are a long tapered root vegetable with orange, purple and red varieties. Orange is the most common variety.

Selecting:

When selecting, look for those that are crisp and firm with good color. For the best flavor, select smaller to medium size carrots.

Storing and Handling:

If greens are attached to the carrots, remove before storing. Carrots should be stored in the refrigerator in the produce drawer and can be stored for two weeks.

Preparing:

Wash thoroughly before using with a vegetable brush under cold running water. Peel, if desired, and trim the tip and root ends.

Steaming: place sliced carrots in a steamer basket over boiling water and cover. Steam for approximately 10-12 minutes.

Boiling: place sliced carrots in a small amount of water in a pan and boil for approximately 8-10 minutes.

Microwaving: place sliced carrots or small cut lengths of carrots in a covered microwave safe dish with a
small amount of water. Cook for approximately 7-8 minutes.

Serving Suggestions:

Salads: serve raw carrots in salads either, sliced, diced or shredded.

Dips: Raw carrot sticks are great for dips.

Side Dish: Toss steamed or boiled carrots with butter or olive oil and some salt and pepper for a quick and easy side dish.

Soups and Stews: Carrots are always a great addition to soups and stews. Cut them into chunks and add at the beginning of cooking time.

Mashed Carrots: Cook carrots and mash as you would potatoes. Add butter and a little brown sugar for a sweet side dish similar to sweet potatoes.

You could also combine mashed carrots with some sour cream and dill for a smooth and creamy side dish.

Another idea, is to combine mashed carrots with regular mashed potatoes for a different taste and season with garlic and butter.
