Carrot Salad with Roasted Peppers
A sweet and smoky carrot salad with garbanzo beans, roasted red peppers and a seasoned oil and vinegar dressing. This is a very flavorful salad that requires only a few ingredients and can be prepared in just a few minutes.

6 Ingredients Needed:
carrots – 2 1/2 cups shredded
canned garbanzo beans – 1 cup rinsed and drained
bottled roasted red peppers – 1/2 cup drained and roughly chopped
scallions – 1/4 cup sliced
rice vinegar – 1 tbsp (or to taste)
toasted sesame oil – 1 tbsp (or to taste)
Optional Addition: Fresh cilantro and/or cumin are nice additions to this salad.

1. Place the carrots, beans, peppers and scallions in a mixing bowl.
2. Add one tablespoon each of the vinegar and oil and any optional additions and toss to combine well. Taste and adjust the vinegar and/or oil if needed. Season with salt and pepper if desired.
