A crisp and crunchy coleslaw, carrot radish slaw is quick and easy to prepare. Sweet carrots and spicy radishes with a simple and flavorful dressing create this fresh carrot slaw that couldn’t be easier.

5 Ingredients Needed:

carrots – 2 cups shredded
Quick Tip: Save time by buying pre-packaged shredded carrots for this recipe

* daikon radish or red radish – 1 cup
sliced thinly into half-moons

*Quick Fact:
Daikon radishes are mild tasting long, large white radishes, shaped very much like over-sized carrots. They are very low in calories and full of Vitamin C. They are also known to aid digestion. Look for very firm radishes without blemishes for the best flavor and texture.

rice vinegar – 1 tbsp

tamari soy sauce – 1 tbsp

olive oil – 1 tbsp

1. In a mixing bowl, combine the carrots and radishes.

2. In a small bowl, whisk together the vinegar, tamari and oil until fully combined.

3. Add dressing to the carrots and radishes and toss well to coat.

4. Allow carrot radish slaw to marinate for a couple of hours before serving.
