Four ingredients
is all you need to put this simple salsa recipe together.

Using your favorite canned tomatoes along with scallions, cilantro and lime juice and zest, in minutes you can create this delicious salsa recipe.

4 Ingredients Needed:

canned diced tomatoes – 1 (14.5 oz) can – drained

scallions – 1/2 cup chopped

fresh cilantro – 2 tbsp finely chopped

lime zest – 1 tsp

fresh squeezed lime juice – 1 tsp

1. In a mixing bowl, combine all the ingredients and toss well.

2. Allow salsa to marinate for at least an hour before serving.

Green Salad:

** Serve this easy salsa recipe as a dressing over a simple salad with warm breadsticks and a bowl of soup.

Easy Egg Salad:

** Combine this quick salsa with chopped hard boiled eggs and a little nonfat sour cream for a quick and zesty egg salad. Serve on salad greens along with warm rolls for a quick meal.

Quick Omelette Idea:

** You could also serve this flavorful salsa recipe as a filling for an omelette along with garlic toast or toasted whole grain bread and sliced fruit.

Spicy Tuna Salad:

Spicy Tuna Pesto Salad Sandwich


4 slices of bread          Spread each bread slice with some of 
                           the pesto.  Divide the drained tuna 
1 small jar of pesto       between two slices of
                           bread.  Top with cheese and 
1 (6oz)can tuna            then the salsa.
 packed in water-drained

2 slices of cheese         Optionally, you can place the 
 (your choice)             sandwiches, without the salsa and
                           top piece of bread, under
                           a broiler for a couple of
                           minutes to melt the cheese.
                                    
                                                Serves 2
