Quick and Simple Breakfast Ideas



These simple breakfast recipes are a great way to start your day. Breakfast is the most important meal of the day and having something healthy to get your day going can be easy with just a little planning.

Try these quick breakfast recipes to help you make healthy food choices for the start of your day.

Eggs:

• Simple egg dishes include scrambled eggs that can be scooped into a soft tortilla shell, sprinkled with shredded cheese and a little salsa.

• You could also make an omelet that can be filled with a selection of fresh vegetables like sweet peppers, mushrooms, chopped tomatoes, scallions, sprouts, etc. Or you can make your omelet with fruit like strawberries or melon for a sweet omelet dish or try a combination of vegetables and cheese or deli meat. The variety of omelets is only limited by your imagination.

• Hard boil a few eggs for a quick grab-n-go meal along with a small container of mustard, mayonnaise or salsa for dipping. Or slice up your egg and make an egg sandwich with a simple spread like low-fat mayonnaise or a soy mayonnaise, pesto, mustard, or a mustard and yogurt combination and a slice of low-fat cheese, fresh basil leaves and thinly sliced tomatoes.

Pancakes – Waffles - French Toast – Bagels – English Muffins:

These are a great choice for a quick breakfast. There are many healthy varieties of these items to choose from in the freezer section of grocery stores – just be sure to check ingredients and choose the ones that are low-fat and without additives, preservatives and artificial ingredients.

• Any of these can be made quickly in a toaster or toaster oven and then finished off quickly with a flavorful topping like sliced fresh fruit (berries, bananas, melon, diced apples or sliced peaches) and a drizzle of honey, maple syrup, rice syrup or agave syrup.

• Pancakes can also be rolled with a simple filling inside. Try spreading a warm pancake with some whipped cream cheese and a thin layer of all-fruit preserves and then roll up and enjoy. Or you could also place a cooked sausage (regular or vegetarian-style) in the pancake, roll it up and dip into some maple syrup.

• Waffles, French Toast, Bagels, English Muffins - lend themselves to a sandwich style quick breakfast meal (either regular like a regular sandwich or open-faced). Heat up the item you have selected and place your favorite filling on top. Some simple toppers are, nut butter and all-fruit preserves, thinly sliced strawberries and a dusting of cinnamon, thinly sliced banana topped with a drizzle of honey, cooked sausage patty (regular or vegetarian-style) with a drizzle of maple syrup, or a couple of thin slices of avocado topped with some crumbled goat cheese and diced tomatoes.

Soft Tortilla Shells: The perfect little fast food wrapper. The sky is the limit on what you can roll up into these portable food holders.

• Some quick and simple ideas are scrambled eggs mixed with fresh vegetables (raw or lightly cooked)
• Whipped cream cheese mixed with dried fruit and chopped nuts
• Cooked mashed beans mixed with a little salsa and shredded cheese
• Canned (drained) tuna or salmon topped with a dollop of Greek style plain yogurt, chopped cucumber and some fresh mint

(The bean and fish ideas may be a little unusual but it’s a nice change of pace in the morning every once in a while).

Hot Cereal:
Hot cereal is a filling way to start the day and with so many whole-grain varieties in the stores these days you will never be bored. Just prepare according to package directions (many of which can be prepared quickly in the microwave if you are short on time).

• Top with any combination of brown sugar, honey, maple syrup, agave syrup, nuts, dried fruit, fresh fruit, diced avocado, a drizzle of cream, a sprinkling of shredded coconut, raisins. nutmeg or cinnamon.


These simple breakfast recipes and ideas are healthy food choices and make for great quick meals to start the day.
