Take a hard boiled egg and slice it into a few lengthwise slices. Toast two slices of whole grain bread. Spread one slice of bread with some low-fat sour cream, sprinkle with some dried oregano, place the egg slices on top, then some fresh basil leaves, and a spoonful of salsa. Top with the other slice of bread and cut sandwich in half.
Scramble a couple of eggs and season with some salt, pepper, and Italian seasoning mix. Place eggs in a line down the center of a soft tortilla shell (warm shell for a few seconds in a microwave), top with some shredded cheddar cheese, chopped apples, and a drizzle of maple syrup. Roll up and enjoy.
Spread some spicy mustard on a slice of sourdough bread, top with strips of a warm, cooked omelet, then deli ham slices (make sure they are nice and thin), a few slices of roasted red peppers, and a thin slice of Swiss cheese. Place in a microwave or toaster oven until the cheese just begins to melt. Remove and cut into quarters or in half.
Top a warm, cooked omelet with a sprinkling of crumbled feta cheese, some chopped pitted green olives, diced green pepper, and some fresh baby spinach leaves. Roll up the omelet and secure with a toothpick. Dip the omelet in some salsa verde or your favorite salsa.
