Best Chicken Salad

The best chicken salad is filled with flavor and simple to make. This salad is made with chicken, fresh vegetables and herbs, and more, tossed in a creamy herb dressing that you can put together in no time. It makes a quick and easy meal all by itself.

Ingredients:

- 2 cups cooked chicken (roughly chopped)
- 1/2 cup cherry tomatoes (halve each tomato)
- 1/2 cup mushrooms (cut into pieces)
- 1/4 cup dried cherries or cranberries
- 2 tbsp toasted sliced almonds
- 1 to 2 scallions (thinly sliced)
- 2 tbsp fresh cilantro (chopped)
- 4 cups romaine lettuce (torn into bite-size pieces)
- 3/4 cup plain low-fat yogurt
- 1 tbsp blue cheese crumbles
- 1 tbsp fresh dill (chopped)


2-3 servings

1. Place the chicken, tomatoes, mushrooms, cherries or cranberries, almonds, scallions, cilantro, and lettuce in a bowl.

2. In a smaller bowl, combine the yogurt, blue cheese, and dill.

3. Add the yogurt mixture to the salad ingredients and toss to combine completely.

Serving Ideas:

** Serve this main meal salad along with thick, toasted slices of French bread and some fresh fruit slices.

** Make some quick-cooking brown rice and toss with a little low-sodium tamari or soy sauce and some of the fresh cilantro and serve along side this easy chicken salad.
