Strawberries and Bananas with Cinnamon Yogurt
Serves 1 to 2
1 cup strawberries – cut into chunks 1/2 banana – cut into small chunks 1 cup low-fat plain Greek-style yogurt 1/2 tsp ground cinnamon 1 tbsp chopped pecans
- In a bowl, stir the yogurt and cinnamon together. Add the fruit and nuts and combine well.
To Serve: Serve in prepared puff pastry shells and drizzle with a little warm chocolate sauce for a quick and easy dessert.

Blueberries with Creamy Goat Cheese
Serves 2
2 cups blueberries 1 cup cantaloupe – cut into cubes 1/2 cup chayote squash - diced 1/4 cup crumbled goat cheese 1 tsp lemon zest Mixed salad greens
- In a bowl, combine the fruit, squash, cheese and lemon zest. Toss well.
To Serve: Serve fruit recipe over mixed salad greens along with warm bread sticks or whole-grain rolls.

Creamy Berry Dessert
Serves 2 to 3
1 cup blackberries 1 cup raspberries 1 cup vanilla yogurt 1 tbsp fresh mint - minced 2 peaches - pit removed and cut in half honey - as desired
- Place the berries in a bowl and drizzle with some honey and toss gently to combine.
- In a smaller bowl combine the yogurt and the fresh mint and mix well.
To serve: Place the peach halves on serving plates. Then scoop the berries over the peach halves, reserving a few for garnish. Then top the berries with the yogurt mixture, garnish each serving with the reserved berries and drizzle a little honey over the top.

Raspberry Parfait
Serves 2
1 cup raspberries 1 cup pears – cut into chunks 3/4 cup - ricotta cheese 1/2 tsp - vanilla extract 1/4 tsp – ground cinnamon 1/2 cup cinnamon graham crackers - broken 1 tbsp - sliced almonds
- In a small bowl, stir the ricotta, vanilla extract and cinnamon until well combined.
To Serve: Take 2 tall glasses (parfait, wine or whatever you may have) and layer ingredients.Place some raspberries and pear chunks in the bottom of the glasses, then some ricotta mixture then some of the broken graham crackers. Keep layering in this manner until ingredients are all used.
- Top each parfait with the sliced almonds and enjoy.
Ingredient Exchange: Instead of vanilla extract, try lemon extract or almond extract.

Mixed Berry Treat
Serves 2 to 3
1 cup blueberries 1 cup raspberries 1 cup strawberries - cut into small chunks 1 1/2 cups (or to desired creaminess) lemon yogurt 1/4 to 1/2 cup low-fat granola
- In a mixing bowl combine the berries with the yogurt and toss well.
To Serve: Fun Dessert: scoop berry mixture into ice cream cones and top each cone with a sprinkling of granola.

Serves 2 to 3
2 cups blueberries 1 cup pineapple chunks 1/2 cup toasted coconut 2 tbsp Brown Sugar
- Combine all ingredients in a bowl and toss well.
To Serve: Serve recipe over vanilla ice cream for a fast and easy dessert anytime.
- This quick fruit recipe also makes a great topping for warm waffles or pancakes.

Mint Raspberry Fruit Salad
Serves 2
2 cups raspberries 1 cup peaches - pit removed and cut into chunks 2 tbsp fresh mint - finely minced 1/2 tsp fresh grated ginger 4 cups romaine lettuce - torn into bite-size pieces raspberry vinaigrette - to taste
- In a bowl, combine the fruit with the mint and ginger.
To Serve: Place the lettuce on serving plates. Scoop the fruit salad onto the lettuce and drizzle the vinaigrette over each serving to taste. Top with a little fresh ground black pepper if desired.

Chocolate Berry Dessert
Serves 3 to 4
1 1/2 cups strawberries - cut into small chunks 1 banana - quarter the banana lengthwise and then slice into cubes 1 tsp ground cinnamon 1/3 cup mini-chocolate chips 2 cups vanilla pudding
- In a bowl, combine the strawberry and banana pieces with the cinnamon and toss gently to coat. Reserve a little fruit for garnish.
To Serve: Serve dessert in glass bowls, layering ingredients in this order: vanilla pudding, fruit, chocolate chips, a dollop of pudding on the top and then garnish with the reserved fruit. If desired you can sprinkle a little cinnamon over each serving. Some cinnamon graham crackers on the side is a nice addition to this quick fruit recipe.
