Bean Salad
with
Olive Oil Vinaigrette

A quick bean salad recipe with green beans, crunchy carrots, bean sprouts, peanuts, cilantro and a simple olive oil vinaigrette dressing. Simple to make and vegetarian friendly too.

2-3 servings

6 Ingredients Needed:
- Green Beans (Fresh or Frozen)
- Shredded Carrots
- Mung Bean Sprouts
- Peanuts
- Fresh Cilantro
- Olive Oil Vinaigrette


Make Ahead for this Salad:
- If using frozen green beans, thaw
and drain ahead of time

Ingredients:

green beans – 2 cups cut into one inch pieces
(fresh or frozen (thaw and drain))

shredded carrots – 1/2 cup
Quick Tip: use packaged shredded carrots to reduce preparation time.

mung bean sprouts – 1 cup
(you may roughly chop if desired)

peanuts – 2 tbsp chopped

fresh cilantro – 1/4 cup chopped

olive oil vinaigrette – as desired to moisten salad
(use an all natural store bought
brand or our
easy vinaigrette salad dressing)

1. In a mixing bowl, combine the vegetables, peanuts and cilantro.

2. Drizzle on the dressing adjusting to desired moistness.

3. Allow bean salad to marinate in the refrigerator for two hours before serving.
