Basic Broccoli Salad



BASIC BROCCOLI SALAD

7 Ingredients Needed:

- 1 medium to large head broccoli (florets only)
(cut the florets into bite-sized pieces, steam until tender, and cool)
- 1/2 cup shredded carrots
- 1/4 cup red onion (chopped)
- 1/4 cup sliced water chestnuts
- 1 clove garlic (minced)
- 2 tbsp olive oil
- 1 tbsp vinegar

3 to 4 servings

1. Steam the broccoli until tender and place in a bowl of cold water to stop the cooking process. Drain and place in a mixing bowl.

2. Add the rest of the salad ingredients into the bowl along with salt and pepper to taste and toss well to combine.

3. Taste and adjust seasonings to taste. Refrigerate for a couple of hours before serving.

Optional Additions:

To add even more flavor try:

* Bacon - crispy cooked and crumbled (vegetarian/vegans use vegetarian bacon)
* Shredded Cheese
* Beans - canned, rinsed, and drained garbanzo or kidney beans
* Nuts - good choices are pine nuts, walnuts, or cashews
* Roasted Red Peppers - this adds a nice smoky flavor
