Squash and Avocado Salad
Avocado Salad Ingredients:
1 - ripe avocado, pitted, peeled, and cubed
1/2 cup - canned mandarin orange segments, drained (reserve liquid)
1 cup each - zucchini and yellow squash, medium dice
1/3 cup - sweet onion, chopped
1/3 cup - marinated artichoke hearts, drained and roughly chopped (reserve liquid)
2 to 3 servings

Directions:
1. Place the avocado, orange segments, squash, onion, and artichoke hearts in a bowl.
2. Drizzle some of the reserved juice from the orange segments and the artichoke hearts over the salad ingredients, salt and pepper to taste, and toss well to combine. Adjust reserved juices as needed.
