This avocado salad recipe is full of flavor and a simple fruit salad that makes a delicious and quick meal at a moments notice. There is something so rich tasting when creamy avocado is mixed with anything.
In this salad, we’ve combined it with just a few ingredients including, sweet mango, crunchy cauliflower and grilled chicken to create a fusion of flavors that can’t be beat. It's simple to make and a great tasting quick salad.

Quick Fact:
Avocados are so full of good things beside their wonderful flavor and creamy, rich texture. Although, one of the fattiest of fruits, most of the fat, which is monounsaturated, is now considered a healthy fat. Avocados also contain potassium, B vitamins, and vitamins E and K. A fully ripe avocado will be soft, not mushy, when lightly pressed.

6 Ingredients Needed:

avocados – 2 large

cauliflower – 1 cup broken into small pieces

mango – 1 cup cut into small cubes
(fresh or frozen mango may be used -
if using frozen, thaw and drain completely before cutting and adding to salad)

grilled chicken – 1 cup diced into medium cubes

fresh squeezed lemon juice – 2 tbsp

olive oil – 2 tbsp


Make Ahead:
- If using frozen mango, thaw and drain

- If preparing your own chicken, prepare 1 cup and cool

1. Take one of the avocados and *cut open, removing the stone and scooping out the fruit.

*Quick Tip: To cut open the avocado, take a sharp knife and cut through on one end until you reach the stone. Now just move the knife against the stone, rotating the avocado until you have completely cut it all the way around. Remove the knife and take hold of both halves of the avocado, one half in each hand, and twist in opposite directions until the avocado comes apart in two pieces.

2. In a large bowl, take one half of the fruit from the opened avocado and mash in the bowl.

3. Add the cauliflower pieces, the diced mango, the chicken pieces and the olive oil and lemon juice. Toss fruit salad well to combine evenly.

4. Take the second avocado and cut it in half, remove the stone and scoop out the fruit. Now take the remaining fruit from the first avocado and all the fruit from the second avocado and dice into medium sized pieces.

5. Add diced avocado to the rest of the fruit salad ingredients and toss gently to combine everything.

The avocado makes this simple fruit salad very creamy and delicious.
