Avocado Rice
Salads


These quick Avocado Rice Salads combine the great flavors and textures of avocado and rice in simple recipes. They provide fast and easy meal solutions anytime.

Use the quick meal ideas provided with each salad for fuss-free menu planning.

Each salad makes approximately two servings.

Salmon and Avocado Rice Salad

6 oz canned (and drained) or grilled salmon (flaked)
1 cup cooked basmati or brown rice
1/2 an avocado - cubed
1/2 cup diced red bell pepper
3 cups roughly chopped watercress
1/4 cup orange juice

- Combine all ingredients and toss well.

- Optionally you may leave the watercress out and combine the rest of the ingredients and serve salad on the watercress.

Light Meal:

* Serve this quick salad with a simple side of apple and pear slices sprinkled with crumbled goat cheese.

Soup and Salad Meal:

* Another way to serve this avocado salad is with a bowl of cold gazpacho soup or a bowl of warm vegetable soup.

Spicy Rice and Avocado Salad


2 cups cooked brown rice
1/2 an avocado - cubed
1/2 cup chopped yellow bell pepper
4 oz can (or to taste) chopped green chilies (drained)
2 oz cubed pepper jack cheese


- In a bowl, combine all the salad ingredients and toss well. Salt and pepper to taste.

Quick Meal Ideas:

Salad with Seafood:

* Serve this easy salad along with grilled or baked fish, such as halibut, tilapia or cod seasoned with herbs and lemon juice.

Simple Salad Meal:

* Serve salad scooped into hollowed out red bell peppers (raw or steamed) on a bed of mixed salad greens along with warm ears of cooked corn on the cob and melted butter.

Optional Additions:

* Add some cumin and chopped fresh cilantro.

Avocado Rice Salad Wraps

1 1/2 cups cooked wild rice
1 avocado – peeled, seeded and thinly sliced
3/4 cup chayote squash – thinly sliced and then cut into matchsticks
Low-fat mayonnaise (to taste)
1/4 cup chopped cashews
Toasted sesame oil or garlic oil (as desired)
Fresh squeezed lime juice (as desired)
4 small or 2 large soft tortilla shells (use plain or flavored varieties)

- To make each wrap, lay out a tortilla shell and spread a thin layer of mayonnaise over the surface.

- Take a portion of the wild rice and, starting about two inches from the bottom, spoon the rice into the center of the shell in a strip from bottom to top and flatten slightly.

- Layer some slices of avocado, some of the chayote squash and then a sprinkling of the cashews over the rice.

- Drizzle a little toasted sesame oil or garlic oil and a squeeze of lime juice over the top.

- To make the wrap, fold up the bottom two-inch edge of the shell over the rice, then fold the sides over each other to close the wrap.

- Repeat each step with each tortilla shell.

Simple Meals:

* Serve these delicious salad wraps with a simple side dish of low-fat cottage cheese mixed with diced cucumber, shredded carrots and fresh, chopped cilantro.

* You could also serve these flavorful wraps with grilled mushrooms and onions topped with fresh grated parmesan cheese.



Cucumber Avocado Rice Salad Rolls

2 cups cooked brown rice
1 cup pickling cucumbers – very thinly sliced lengthwise
1/2 an avocado – peeled, seeded and thinly sliced
1/2 cup low-fat mayonnaise
1 tsp finely diced fresh cilantro
1 tsp lemon zest
4 large leaves of red or green leaf lettuce

- In a bowl, place the mayonnaise, cilantro and lemon zest and combine well.

- To make the rolls, lay out a lettuce leaf with the spine facing toward you. Spread a layer of the mayonnaise about an inch from the bottom of the leaf running from side to side in a narrow strip. Leave some space on either side of the leaf to fold the sides in.

- Place 1/2 cup of the rice on top of the mayonnaise, then add a layer of the cucumber and then a layer of avocado.

- Starting with the lettuce leaf edge closest to you, roll the leaf just enough to go over the filling, then fold in each side of the lettuce leaf, then continue rolling the leaf until you reach the end, tucking in the sides as you roll. Secure with a toothpick if desired or simply serve each salad roll with the edge facing down on the serving plate.

- Repeat each step with each lettuce leaf.

Quick Meal Ideas:

Salad and Seafood:

* Make a dipping sauce for the salad rolls with tamari or soy sauce and a squeeze of lemon juice added. Serve salad along with grilled chicken or salmon.

Salad with Eggs:

* Serve these salad rolls with a cheese omelet topped with salsa.

Optional Additions:

* Sprinkle some toasted sliced almonds or toasted sunflower kernels over the top before rolling.
