*brown rice – 3 cups cooked
avocado – 1/2 an avocado
(peeled, stone removed and diced)
green olives – 1/4 cup diced
cherry or grape tomatoes – 1/2 cup
(cut each tomato in half)
havarti cheese – 1/4 to 1/2 cup diced
*Quick Tip: Use quick cooking boil-in-a-bag brown rice to speed up salad preparation even more.

- Prepare the rice and measure 3 cups
In a mixing bowl, combine all the ingredients and toss.
Optionally, you can add some fresh chopped herbs such as basil, chives, parsley or oregano.
** Rice Salad with Garlic French Bread: Serve avocado rice salad with sliced French bread with garlic spread.
Ambrosia Fruit Salad.
** Serve salad with a bowl of vegetable soup and a side of coleslaw.
