Avocado Recipes
A delicious selection of avocado recipes. The rich taste of avocado is combined with a few ingredients to turn these easy recipes into quick meals, side dishes, wrap sandwiches and more.
Each of these avocado recipes makes 2 to 3 servings.
Avocado with Roasted Peppers
3 small red potatoes – leave skin on, cube and boil until tender and keep warm
1 cup jarred roasted red peppers – drained and roughly chopped
2 stalks of celery – diced
garlic oil – to taste
1 medium avocado – peeled, pitted and cubed
Parmesan cheese – to garnish
Make Ahead:
- Boil potatoes and keep warm.
- In a bowl, combine the warm potatoes, peppers, and celery.
- Drizzle the garlic oil over this mixture along with salt and pepper to taste.
- Add the cubed avocado and toss gently.
- Serve on a bed of spinach leaves or in bowls and garnish each serving with parmesan cheese.
Optional Additions: cubed grilled chicken, grilled shrimp, or sautéed tempeh or tofu cubes
Extra Flavor Boost Options: grated lemon zest, capers, or pine nuts

Avocado And Pasta Recipe
2 cups cooked rotini pasta
1 medium avocado – peeled, pitted and cubed
2 plum tomatoes - diced
1 cup shredded celery root
1 tbsp pitted oil cured olives – roughly chopped
2 tbsp lemon juice
- Cook the pasta according to package directions and drain.
- Place all ingredients in a mixing bowl and toss to combine. Salt and pepper to taste.
- Serve in bowls along with warm garlic breadsticks.
Optional Additions: 1/2 cup low-fat cottage cheese, 1/2 cup marinated artichoke hearts – drained and roughly chopped, or 1/2 cup cooked lentils
Extra Flavor Boost Options: fresh basil leaves (torn into pieces), drizzle of toasted sesame oil, or salsa

Grilled Chicken and Avocado Wrap
1/2 cup canned black beans - rinsed and drained
1/2 cup grilled chicken - cubed
(prepared store bought grilled chicken may be used)
2 scallions - sliced
lime juice – to taste
1 medium avocado – peeled, pitted and sliced
fresh cilantro (to taste) - chopped
small soft tortilla shells
Make Ahead:
- If preparing your own chicken, grill chicken and cube.
- In a mixing bowl, combine the beans, chicken, scallions, and lime juice.
- Fill a small tortilla shell by placing some of the bean mixture down the center of the shell. Place slices of the avocado on top of the bean mixture and then top with as much cilantro as desired. Squeeze a little more lime juice over the top and close the
wrap.
Serve with your favorite chips and salsa.
Optional Exchanges: exchange the chicken with 1/2 cup cubed cooked sweet potato or 1/2 cup steamed or sautéed flavored tempeh, or 1/2 cup flaked tuna.
Extra Flavor Boost Options: sour cream, chopped jalapeno pepper, chopped sun-dried tomatoes, or crumbled crispy-cooked bacon or vegetarian style bacon.

Citrusy Avocado Fruit Recipe
1 medium avocado – peeled, pitted, and cubed
1 navel orange – peeled, pith removed, sectioned (cut each section in thirds)
1 cup strawberries – cut into chunks
1/2 cup chayote squash - cubed
1/2 to 3/4 cup low-fat sour cream or Greek style plain yogurt
1 tbsp lemon juice
1 tsp lemon zest
- Place all ingredients in a mixing bowl and toss to combine well.
- Serve in glass bowls or parfait glasses with whole-grain crackers on the side.
Extra Flavor Boost Options: toasted or raw chopped walnuts, almonds, or hazelnuts

Spicy Tuna with Avocado Recipe
2 cups cooked brown rice – keep warm
6 oz grilled tuna – flaked (canned, water-packed tuna may be used – drain first)
1 cup snow peas – lightly steamed
2 tbsp fresh cilantro - chopped
1 cup mushrooms – thinly sliced
2 tbsp (or to taste) jarred jalapeno slices - chopped
2 tbsp toasted sesame oil
2 tbsp lemon juice
1 medium avocado – peeled, pitted, and sliced
Make Ahead:
- Cook the rice according to package directions and keep warm.
- If not using canned tuna, grill tuna and flake.
- Steam the snow peas.
- Place the rice, tuna, snow peas, cilantro, mushrooms, and jalapeno in a mixing bowl.
- Add the oil and lemon juice to the bowl and toss all ingredients well.
- To serve, place slices of avocado on each serving plate and serve the tuna mixture over the slices. You could also reserve a couple of slices of avocado and cube these and garnish the top of each serving with the cubed avocado.

Creamy Avocado Relish with Baby Bok Choy
6 baby bok choy – cut each in half lengthwise 1 medium avocado – peeled, pitted and cubed 1/4 cup crumbled goat cheese 1/2 cup store bought packaged cooked beets - cubed olive oil vinaigrette – to taste
- Steam the bok choy until just tender and bright green and keep warm.
- While bok choy is steaming, combine the avocado, goat cheese, and beets in a bowl.
- Place the steamed, warm bok choy on serving plates.
- Top each serving of bok choy with the avocado mixture and then drizzle with the olive oil vinaigrette to taste.
