Apple Carrot Salsa

Apple Carrot Salsa is filled with so much flavor. A combination of apples, carrots, sweet corn kernels, crunchy cucumber and almonds, it’s a great, quick salsa, salad topping and more.

This salsa recipe can be partially prepared in a blender or food processor to speed up the preparation time.




Yield: Approximately 3 cups

7 Ingredients Needed:

1 apple – cored and cut into chunks

1 large or 2 small carrots – cut into chunks

sweet corn kernels – 1/2 cup

cucumber – 1/2 cup finely diced

almonds – 1/4 cup chopped

fresh squeezed lemon juice – 1 tbsp

olive oil – a drizzle or to taste

1. In a food processor or blender, add the apples and carrot pieces and process to desired consistency.

2. Transfer to a mixing bowl and add the remaining ingredients. Stir well to combine ingredients completely and allow to marinate for at least an hour.
