Heading Back To School - Easy and Healthy Lunchbox Meal Ideas
It's hard to believe that summer is almost over. Seems this time of the year goes by faster than any other time.
I remember when my mom used to pack my lunch everyday and I really looked forward to it. I wasn't one of those kids who traded away my food. My mom made some great lunchtime meals for my siblings and me.
Times have changed however and with less time to make something healthy and good tasting for your kids it's hard to get creative everyday with lunch.
It really isn't too difficult to make wholesome lunchbox meals and with just a bit of organizing and streamlining you will have a nice selection of meal options.
Here's a bit of help with making a wide variety of lunchtime meals quickly and easily. The trick is to keep it as simple as possible with easy ideas like sandwiches, soup, salads, and pasta.
For sandwiches, vary the bread you use (whole wheat, rye, sour dough), spreads (mayonnaise, sour cream, hummus, bottled dressings), and fillings (tuna, different cheeses, vegetarian patties).
Using your own homemade soups or store-bought natural low-sodium vegetable soup as a base gives you a lot of flexibility for a soup lunch. With optional add-ins from extra veggies, leftover cooked chicken, steak, fish, or even cooked potatoes (all cut into bite-sized pieces), soup is a really easy lunch and great for the fall and winter months.
With salads, the variety is endless and never has to be boring or time consuming. Change up the salad greens, veggies, and dressing and you will always have something healthy for your kids.
Leftover pasta is probably one of the fastest lunchbox meals and with a few simple side dish options it will always be a healthy and tasty meal.

Smart Idea For Summer - Make Ice Cream Fun and Mess-Free
I like finding helpful products for everyday use and share them with my visitors. Here is something I recently found. It is called the Dripstik and was invented by a mother of five children.
It’s a soft plastic frozen treat holder. One end holds frozen treats like popsicles on a stick and you just flip it over and the other end holds ice cream cones in almost any size. Salsa – Summer Recipes and Easy Meal Ideas
When the heat of the summer season has arrived all I want is something cool and easy to prepare for quick meals. I love salsa because it is such a versatile dish with many uses.
Summer and salsa seem to go together. It's light, refreshing, and simple to make. I love putting together a fresh and flavorful salsa and use it as a flavor-packed ingredient in my meals.
Here is a basic salsa recipe that comes together in minutes and can be used in a variety of ways.
Ingredients: 2 cups tomatoes (diced) 2 cloves (more if you like a lot of garlic) fresh garlic (minced) 1/2 cup fresh cilantro (chopped) 1/2 of a red onion (chopped) Juice of one lime Salt to taste
Optional Additions (to taste):
diced jalapeno pepper cubes of ripe avocado roasted corn kernels roasted red peppers (chopped) (this gives a nice smoky flavor) fresh zucchini (diced) black beans
Now that you have some fresh salsa, here are some quick and easy meal ideas:
* Layered Salsa Salad: Place a layer of salad greens on a plate, a layer of shredded cabbage, some thin slices of avocado, then chopped pitted green olives, then spoon some of the salsa over top. Then another layer of greens, then some slices of deli meat (your choice – cut into pieces), then some chopped, drained marinated artichoke hearts, then thin slices of seedless cucumber, finally some more of your salsa.
* Salsa Wrap: Spread a soft tortilla shell with a layer of your favorite hummus, top with some fresh sprouts, some fresh grated parmesan cheese, and then as much salsa as you like. Wrap it up and enjoy.
* Quick Tofu Salad: Here’s a flavorful vegetarian salad and an easy salsa idea. Combine chopped celery, prepackaged flavored baked tofu (cut into small chunks), roasted red peppers, cubed chayote squash, and some diced apple with as much salsa as desired. Serve on salad greens or on top of a bed of cooked and cooled couscous for a quick and easy meal.

Rice Noodle Toss
My sister and I were scrounging around for something quick to eat the other night and she came up with this fast dish that literally takes only minutes to prepare.
Here's the scoop:
1. Take a package (we used a 13.2oz size) of rice noodles (sometimes they are labeled rice sticks) - we used half the package. Cook for about 8 minutes until tender, drain well, and place in a bowl.
2. Add to the noodles, 1 (15oz) can black beans (rinsed and drained), 1 (14.5oz) can diced fire roasted tomatoes (including the liquid), and about 1/2 to 3/4 cup of salsa verde (we found an avocado salsa verde that was really tasty).
3. Toss everything together and serve in bowls. Top each serving with some chopped scallions and enjoy. That's it!
* Little extras - you could add a dollop of sour cream on top too. If you add a vegan sour cream the whole dish is still vegan friendly (yeah!!)
This recipe makes four good size servings. Hope you like it. It was so quick, easy, and delicious with just enough spice.

Potato Salad with Grilled Tofu Steaks
Potato salad has always been a staple during the summer months and this quick recipe is filled with a lot of flavor and a perfect choice. Made with scallions, olives, and fresh herbs it's got a really rich flavor and pairs perfectly with grilled tofu steaks.
You can grill the tofu yourself by slicing an extra firm block of tofu into half-inch slices (press water out first), then brush on some olive oil on both sides and sprinkle with dried herbs and grill or broil until golden on each side. Serve it next to this easy potato salad and you have a simple vegetarian meal.
Meal Tip: Use any leftover grilled tofu to make simple appetizers by spreading one slice with mustard, pesto, or olive tapenade, then top with thinly sliced seedless cucumbers, and a couple of slices of jarred (and drained) roasted red peppers. Take another slice of grilled tofu and put some of the spread you are using on one side, place on top of the peppers (spread side down) and cut this tofu sandwich into thirds to make finger food appetizers.

Mozzarella Taco with Citrus Black Beans and Corn Muffins
I have always loved the flavor of smoky cheeses so I made this easy cheese salad with one of my favorites. I combined smoked mozzarella cheese, fresh basil, juicy tomatoes, flavorful olives and crunchy cucumbers with a simple Italian dressing.
