This Mexican coleslaw recipe is made with cabbage combined with corn, red wine vinegar, olive oil and flavorful spices. It's a simple, fast and delicious coleslaw.

This quick coleslaw makes a great accompaniment to sandwiches, burgers, salmon steaks and so much more. Try the easy menu planner below for quick and easy meal ideas and serving suggestions.

6 Ingredients Needed:

packaged coleslaw mix – 3 cups

corn kernels – 1/2 cup
(fresh or frozen (thaw and drain))

red wine vinegar – 2 tbsp

olive oil – 2 tbsp

cumin – 1/4 tsp

cayenne pepper – a pinch


Addition Option: To add a little more heat and spice to this coleslaw recipe, add diced jalapeno peppers as desired.

Make Ahead:
- If using frozen corn, thaw and drain

1. In a mixing bowl, combine the coleslaw mix and corn.

2. In a smaller bowl or jar with tight fitting lid, whisk or shake the red wine vinegar, olive oil, cumin and cayenne pepper until thoroughly combined.

3. Add dressing to coleslaw and toss well. Taste and add salt and pepper if desired.

Note: Allow coleslaw to marinate in the refrigerator for at least three hours, tossing occasionally.

Broiled Salmon Steaks:

Take 4 (6oz) salmon steaks and place on a broiler pan. Drizzle or spritz on a little olive oil on each steak. Then squeeze on some fresh lemon juice and sprinkle with dried dill and garlic powder. Broil fish for approximately 8 to 10 minutes or until cooked through, checking after 8 minutes for doneness.


** You can also serve this quick coleslaw recipe over warm basmati rice drizzled with a little garlic oil along with slices of grilled vegetables like, Portobello mushrooms, tomatoes, zucchini and jicama.
